Ingredients

  • 2 cups flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • pinch of ground cloves
  • 1 cup brown sugar – packed
  • ½ cup butter (1 stick) – softened
  • ½ cup dark molasses
  • 1 large egg
  • 1 cup raisins

Method

  1. Preheat oven to 180 C.
  2. Lightly grease a baking tray and set aside.
  3. In a large bowl, combine flour, salt, baking powder and spices.
  4. In another bowl, beat the butter and sugar together until light and fluffy before adding the egg and molasses.
  5. Stir until well combined.
  6. Slowly add the dry ingredients, constantly mixing. Then, stir in the raisins and make a dough.
  7. Flour your hands and press the dough over the baking tray in an even layer.
  8. Bake for 16-18 minutes, or until cooked through.
  9. Let cool completely before slicing into pieces.
