Ingredients
- 1 cup Almond butter
- ½ cup Low GI Sugar
- 1 teaspoon Vanilla extract
- 2 Eggs (large)
- 1/3 cup Almond flour
- ½ teaspoon Salt
- ½ teaspoon Baking soda
- 2 tablespoons Chia seeds (whole)
- 2 tablespoons Flax seeds (whole)
- 1/3 cup mini Chocolate chips
Method
- Preheat oven to 180C and line a baking tray with baking paper.
- To a bowl, add the almond butter, low GI sugar, eggs, and vanilla. Beat until combined.
- Add almond flour, salt, baking soda, chia seeds, flax seeds, and chocolate chips. Mix until incorporated.
- Freeze the dough for 15 minutes to allow it to thicken.
- Scoop the dough onto the lined baking tray, keeping a few centimetres of space between the biscuits. The dough should make approximately 12 biscuits.
- Bake for 10 minutes until slightly golden around the edges. Allow the to cool for 5 minutes before transferring to a cooling rack.
- Serve warm or let them cool completely.
- Store them in an airtight container.
