Ingredients
Slice
- 1 cup gluten free flour e.g. almond flour
- ¼ cup Low GI Sugar
- 1 tsp vanilla essence
- ¼ tsp salt
- ½ cup dairy free butter melted
Filling
- 3 eggs
- Zest of 1 lemon
- ½ cup lemon juice
- ¼ cup Low GI Sugar
Topping
- 1/2 a lemon, thinly sliced
Method
- Preheat the oven to 170C. Line and grease a 20cm x 20cm pan with baking paper and set aside.
- In a medium mixing bowl, add all the crust ingredients and mix together until combined.
- Transfer it into the lined pan and press down until even.
- Bake for 20 minutes until golden.
- While the crust is baking, prepare the filling. In a mixing bowl, add flour and Low GI sugar and mix well.
- Add the eggs and lemon juice and whisk.
- Pour the lemon filling over the cooked crust and spread out across the pan. Bake for 20 minutes, or until the filling is firm.
- Remove from the oven and let cool completely.
- Once cool, slice thin lemon pieces and place on top of the slice. Cut slice into pieces and serve. Refrigerate and keep for up to a week.
