Ingredients

Slice

  • 1 cup gluten free flour e.g. almond flour
  • ¼ cup Low GI Sugar
  • 1 tsp vanilla essence
  • ¼ tsp salt
  • ½ cup dairy free butter melted

Filling

  • 3 eggs
  • Zest of 1 lemon
  • ½ cup lemon juice
  • ¼ cup Low GI Sugar

Topping

  • 1/2 a lemon, thinly sliced

Method

  1. Preheat the oven to 170C. Line and grease a 20cm x 20cm pan with baking paper and set aside.
  2. In a medium mixing bowl, add all the crust ingredients and mix together until combined.
  3. Transfer it into the lined pan and press down until even.
  4. Bake for 20 minutes until golden.
  5. While the crust is baking, prepare the filling. In a mixing bowl, add flour and Low GI sugar and mix well.
  6. Add the eggs and lemon juice and whisk.
  7. Pour the lemon filling over the cooked crust and spread out across the pan. Bake for 20 minutes, or until the filling is firm.
  8. Remove from the oven and let cool completely.
  9. Once cool, slice thin lemon pieces and place on top of the slice. Cut slice into pieces and serve. Refrigerate and keep for up to a week.
