Ingredients

  • 4 bananas (approx. 1 1/3 cups, mashed)
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 60g Low GI sugar (1/3 cup)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour (white or whole wheat)
  • 2 tablespoons unsalted butter, melted

Method

  1. Grease a standard rectangular loaf pan
  2. Mash bananas in a mixing bowl.
  3. Add the egg, vanilla, Low GI sugar and cinnamon and stir well to combine.
  4. In a separate small bowl stir together flour, baking powder, baking soda and salt.
  5. Add to banana mixture and stir to combine. Gently stir in melted butter.
  6. Bake at 180° C for 35-45 minutes or until a skewer inserted into the centre comes out clean.
  7. Allow to cool in the pan for 5-10 few minutes before cooling on a wire rack.
