Ingredients
- 450g linguini pasta
- 4 cups cherry tomatoes (halved, then placed in a bowl and sprinkled with a little, salt, pepper and sugar)
- 1 large zucchini (grated)
- ¾ cup almonds (try toasting in the microwave for 3 minutes)
- 1 cup basil leaves
- 1 teaspoon red pepper flakes
- 1 large tomato (diced)
- ¼ cup extra virgin olive oil
- 2 large garlic cloves (chopped)
Method
- Cook pasta in salted water until al dente
- Place almonds, large tomato, garlic, red pepper flakes and half of the basil into a food processor and process into a coarse paste
- In a large bowl, mix the pasta, almond-tomato paste, extra virgin olive oil, remaining basil, zucchini and cherry tomatoes
- Season with a little salt and/or pepper and then serve
