Ingredients

  • 1 cup Almond butter
  • ½ cup Low GI Sugar
  • 1 teaspoon Vanilla extract
  • 2 Eggs (large)
  • 1/3 cup Almond flour
  • ½ teaspoon Salt
  • ½ teaspoon Baking soda
  • 2 tablespoons Chia seeds (whole)
  • 2 tablespoons Flax seeds (whole)
  • 1/3 cup mini Chocolate chips

Method

  1. Preheat oven to 180C and line a baking tray with baking paper.
  2. To a bowl, add the almond butter, low GI sugar, eggs, and vanilla. Beat until combined.
  3. Add almond flour, salt, baking soda, chia seeds, flax seeds, and chocolate chips. Mix until incorporated.
  4. Freeze the dough for 15 minutes to allow it to thicken.
  5. Scoop the dough onto the lined baking tray, keeping a few centimetres of space between the biscuits. The dough should make approximately 12 biscuits.
  6. Bake for 10 minutes until slightly golden around the edges. Allow the to cool for 5 minutes before transferring to a cooling rack.
  7. Serve warm or let them cool completely.
  8. Store them in an airtight container.
