Information provided on this site is developed and reviewed by experts in nutrition, food technology and health. The SRAS is funded through the Australian Sugar Industry Alliance (ASA) and New Zealand Sugar.

Sugar cane (Saccharum officnarum) is one of the several species of tall perennial true grasses of the genus Saccharum, tribe Andropogoneae, native to the warm temperate-to-tropical regions of Southern Asia, and is used for the production of sugar.

When the harvested sugar cane is transported to the sugar mill, it first passes through a shredder. This reduces the billets of cane in to a fibrous mass. The shredded cane then passes through a series of mills where it is washed and crushed to extract as much sugar juice as possible.

The refining process is also known as the purification step, because it a process that simply removes all impurities and colour, leaving only the pure white sucrose.
