Linguini fini


Linguini Fini with No Cook Tomato Sauce


  • 450g linguini pasta
  • 4 cups cherry tomatoes (halved, then placed in a bowl and sprinkled with a little, salt, pepper and sugar)
  • 1 large zucchini (grated)
  • ¾ cup almonds (try toasting in the microwave for 3 minutes)
  • 1 cup basil leaves
  • 1 teaspoon red pepper flakes
  • 1 large tomato (diced)
  • ¼ cup extra virgin olive oil
  • 2 large garlic cloves (chopped)


  • Cook pasta in salted water until al dente
  • Place almonds, large tomato, garlic, red pepper flakes and half of the basil into a food processor and process into a coarse paste
  • In a large bowl, mix the pasta, almond-tomato paste, extra virgin olive oil, remaining basil, zucchini and cherry tomatoes
  • Season with a little salt and/or pepper and then serve
