Ingredients

Chilli

  • 2 x 420gram cans white cannelloni beans or kidney beans & baked beans
  • 6 rashers of lean rindless bacon chopped
  • 2 tablespoons of oil
  • 2 onions
  • 2-3 garlic cloves
  • 1 x 420 gram can chopped tomatoes
  • 1/2 cup of tomato sauce
  • 2 tbs Low GI Sugar
  • 2 tsp Chilli Powder
  • 2 tsp Smokey Paprika
  • 1 tsp Ground Cumin
  • 1tbsp of Malt Vinegar
  • Salt and Pepper
  • 2 cups of Beef stock or Vegetable stock

To Serve

  • Crusty bread
  • Parsley
  • Tortilla chips
  • Cheese

Method

  1. Finely chop onions and garlic.
  2. Dice bacon and add to large saucepan with oil over a medium heat until browned.
  3. Add onions and garlic and stir for 3-5 minutes.
  4. Stir in spices, salt and pepper, tomatoes, tomato sauce and Low GI sugar.
  5. Add vinegar, beans and stock, stir and let simmer for 15-20 minutes.
  6. Sprinkle with parsley, cheese and tortilla chips and serve with warm crusty bread.
