Ingredients

Salad

  • 2 pieces of steak
  • 1 large cos lettuce chopped
  • 500g cherry tomatoes
  • 2 medium cucumbers
  • 1 mango peeled and sliced thinly
  • 1 small red onion sliced thinly
  • 2 avocados cubed
  • 100g goats cheesed crumbled

Dressing

  • 1 bunch of mint chopped
  • 1 small bunch of coriander chopped
  • 1 red chilli thinly chopped
  • 1 garlic clove thinly chopped
  • 100ml olive oil
  • 1 lime juiced
  • 1 lime zest
  • 2 tbsp balsamic vinegar
  • 2 tbsp Low GI sugar, melted in boiling water

Method

  1. Chop all dressing ingredients finely and combine ingredients in a medium bowl.
  2. Season steak and cook on high heat until tender. Rest for 5 minutes before chopping into thin slices.
  3. Scatter chopped lettuce in a large salad bowl. Add tomatoes, onion, mango, cucumber and toss together. Top salad with steak, avocado and goats cheese.
  4. Add dressing and serve.
